We always had HUGE family reunions on my mother's side of the family. My Grandmother was one of 8 children---2 sets of twins! There were lots of great eats and recipes were always exchanged. This is a recipe my mom got from my Great Aunt Edna at one of those reunions. It's delicious.

Ingredients For edna's ferdans

2 cbuttermilk

2 cflour
-
1/2 tspsalt

1 tspbaking soda

1 tspbaking powder

3large eggs, seperated

5 Tbspsugar

1/2 clingonberries or raisins* see note below

powdered sugar for sprinkling

vegetable oil for frying
How To Make edna's ferdans

1Mix dry ingredients together in a bowl.

2beat egg yolks, sugar and buttermilk together in a bowl.

3combine the dry ingredients with the wet.

4*at this point, optional add-ins go in: 1/2 tsp. orange zest with 1/2 cup lingonberries, or; 1/2 tsp. cardamon with 1/2 cup raisins.

5beat egg whites until stiff and fold into the batter. let stant 5 to 10 minutes.

6Heat a large cast iron skillet and add enough vegetable oil to fry Ferdans. Drop by 1 tablespoon each in the skillet and fry til golden (like pancakes).

7sprinkle with powdered sugar and enjoy
