Pizza is one of my personal favorites. This pizza is FANTASTICO!! It's actually easier than making your own pizza dough. By using the tubes of spices or fresh herbs that you can pick up in your supermarket, the cauliflower really does become dough. Let's Try It

We think pizza should be a food group and love that we can have a healthier version with this cauliflower crust recipe. The spices and cheese add so much flavor you wouldn't guess that the crust is cauliflower. It gets very crisp. Topped with the peppers, onions, and cheese...yum!

Ingredients For crazy good cauliflower pizza

1cauliflower head
-
1/2 tsppureed garlic paste or 5 cloves minced
-
1/2 tspcrushed red chili pepper paste

2-3large/extra large egg whites
-
1 cmozzarella shredded
-
1/2 cfinely shredded Parmesan reggiano cheese
- PEPPER AND ONION SAUTE

1red bell pepper
-
1medium onion, finely diced

1olive oil, lightly
How To Make crazy good cauliflower pizza
Test Kitchen Tips
The key to the crisp crust is making sure to squeeze out the water really well. It may take a few times to do this (it did for us). If it's too wet, the crust will be soggy.

1Preheat your oven to 450. Rice cauliflower. This means put freshly washed cauliflower that you have cut into florets into the food processor. Pulse until it looks like a grain.

2Place in a microwave-safe dish and nuke for 8 minutes.

3I always spread it out on a dishtowel when it's done to cool.

4Then I put it back into the center and wring out the excess water. I think this really helps it become crusty.

5Dice onions and peppers. Sauté with olive oil. Add salt and pepper to taste. Set aside.

6Take cauliflower, egg whites spices, and cheeses. Mix well with clean DRY hands.

7Take a sheet of parchment paper and turn over a baking sheet or chopping board. You want to be able to slide it onto the pizza stone. Lightly oil and sprinkle cornmeal. With a big serving spoon, dump a little cauliflower at a time until you can press it into a circle. Push edges up until it resembles the crust of a pizza. It should be no more than 1/4 inch thick.

8Bake until golden, about 10 minutes.

9Remove from oven and place back on an upside down baking sheet or board. Add onion and pepper mixture and spread out thinly. Top with more Parmesan and mozzarella. Bake another ten minutes. until bubbly. Keep in mind, oven temperatures vary.
