My family loves crepes so I found a recipe in a vegan cookbook and changed it to work for me. You can add you favorite ingredients or just eat with a light fruit sauce.

Ingredients For basic crepes

1 call purpose flour

1/2 tspbaking powder

1/2 tspbaking soda

3 Tbspsugar

1/4 tspsalt

How To Make basic crepes

1In a medium bowl, combine the flour, baking powder, baking soda, sugar, and salt. Add milk and vanilla extract and mix until smooth.

2Heat butter in a skillet over medium heat. Pour about 1/4 cup of the batter mix into the skillet, swirling to coat the bottom of the skillet as evenly as possible with batter. Cook until the edges are lightly brown and the crepe is almost dry on the top. Loosen the edges with a thin spatula and flip the crepe over with your fingers. Cook crepe an additional 15 seconds. Transfer to a plate and continue cooking the remaining batter.
