Light, fluffy, and oh so addictive! They are so quick and easy to make, it's almost dangerous - lol. The blueberry is a great addition to a great little corn fritter. These make a great snack, or breakfast treat with a cup of coffee. I hope you enjoy them as much as I do!

Ingredients For mini blueberry corn fritters

1 1/3 cap or bread flour

1 tspsalt

2 tspbaking powder
-
4 Tbspsugar
-
2/3 cbuttermilk (whole milk with work too)

1 Tbspvegetable oil
-
1 lgegg
-
1 ccorn
-
1/2 cblueberries, diced
- OPTIONAL:

powdered sugar, for dusting
How To Make mini blueberry corn fritters

1Heat deep fryer for minis, or oil in a medium skillet for regular fritters.

2In a mixing bowl add flour, salt, baking powder, and sugar.

3In a separate container add milk, oil, and egg. Whisk to combine.

4Pour wet ingredients into dry. Stir until combined.

5Fold in corn and blueberries.

6For minis carefully drop a heaping tablespoon of batter into hot oil. I cook 6 at a time. For regular drop about 1/4 cup scant into skillet, 4 at a time.

7Cook until golden about 2 minutes. Turn and cook until golden and crispy another 2 to 3 minutes.

8Drain and allow to cool 5 minutes before serving.

9Dust with powdered sugar if desired and enjoy!
