"look at her big buns!" cinnamon rolls
(3 ratings)
My mom, now in a nursing home several hours away, always enjoys the fresh bakery that I bring her every month. Over the holidays, when I asked her what she'd like, she said, "I'm hungry for great big cinnamon rolls." So, to make her smile, I made this. When I brought it to the dining room to share with her friends, one of the more mischievous residents yelled very loudly, "MAVIS! COME QUICKLY! LOOK AT THE SIZE OF THIS GIRL'S BUNS!" The whole dining room erupted into laughter and turned around in their seats to see that "the girl" was me. And now you know the rest of the story. lol

How To Make "look at her big buns!" cinnamon rolls
-
1Please Note: Prep time does not include defrost or rise times. These are wonderful to give as gifts. A local bakery charges $7.00 for these.
-
2Night Before: Defrost frozen bread dough by spraying inside of large ziplock bag with butter cooking spray, place frozen dough inside and place in fridge until morning.
-
3Combine sugar and cinnamon and set aside. Soften but not melt 6-7 TB. butter.
-
4Roll dough into a 7x14 rectangle. I do this between two sheets of parchment paper. With pizza cutter, cut in 1/2 length-wise, forming two 3 1/2x14 pieces of dough. Attach two of the 3 1/2" ends together making a long 3 1/2x28 inch piece of dough.
-
5Spread with softened butter, then top with cinnamon sugar mixture leaving about 1" plain at each end to seal. Use a rolling pin to very lightly press sugar into dough. Starting at 3 1/2" end, roll slowly. Pinch and secure end very tightly.
-
6Transfer to parchment lined and sprayed baking sheet, cover with sprayed saran wrap loosely, and allow to rise in a warm spot until doubled, about 2 hours. Remove wrap. Here, I usually secure end of dough with 2 toothpicks, poked straight into side for extra security. Bake at 350 degrees for about 20 minutes. (I have a very hot gas oven. In an electric oven, it may take a little longer as oven temps vary.) Watch closely. If it reaches desired brownness before it is fully baked, tent very loosely with tin foil.
-
7While very warm, glaze with your favorite powdered sugar glaze. I have found that Pillsbury Creamy Supreme Classic White canned frosting works beautifully and hardens just like homemade glaze if you put it on while the roll is still very warm. Place frosting in microwave until it gets quite thin, then drizzle.
