healthier blueberry oat bread by noreen
Trying to eat a bit healthier from time to time. This is a lower fat quick bread. It very moist. It is loaded with Blueberries, and so so delicious. The original recipe I had was given a major makeover to make it tastier and lower fat. Enjoy!

2 1/4 call purpose flour

3/4 clow fat milk

1 cbrown sugar packed

1/4 ccanola or vegetable oil

1/4 capple sauce
-
2eggs
-
1 tspvanilla extract
-
1 crolled oats
-
1 Tbspbaking powder
-
1 Tbspcinnamon
-
1/4 tspsalt
-
1/2 cplus 1/8 cup chopped walnuts or pecans

2 cfrozen or fresh blueberries
-
1 tspwater
-
1 Tbspsugar
How To Make healthier blueberry oat bread by noreen

1Heat oven to 350 degree's. Spray oil a loaf pan.

2Mix brown sugar, oil, eggs, vanilla, and milk in a large bowl.

3Mix in the flour, oatmeal, cinnamon baking powder, salt and 1/2 cup nuts. Mix well. Fold in the blueberries until mixed evenly. Spread in loaf pan.

4Mix remaining 1/8 cup nuts with a TB sugar, and 1 tsp of water. Sprinkle over top of bread batter. Lightly pat down.

5Place in oven. Bake at 350 degree's 50-60 minutes or until golden brown. Test with pick to come out clean. Cool 15 minutes. Remove from pan and cool completely.
