nor's chunky apple butternut squash bread
(3 ratings)
I had a recipe handed down from an aunt. It was originally just butternut squash bread. I removed most of the oil in it. I added spice, apples, and applesauce. It is delicious. I made this into a whole new recipe. It is better than the original. I think you will be pleasantly surprised at how good it is. Yummy cinnamon spice and apples are a wonderful addition to this bread.
Blue Ribbon Recipe
Full of apples and warm spices, this apple butternut squash bread is sweet, tender, and delicious. Walnuts are spread throughout the quick bread and provide a nutty flavor and satisfying crunch. We love the sweetness the streusel topping adds. This bread will be a delicious treat in the fall with a cup of tea.

How To Make nor's chunky apple butternut squash bread
Test Kitchen Tips
If canned butternut squash is not available, cube and boil butternut squash for about 15 minutes. Once tender, drain. Puree by running it through a food processor until smooth.
-
1Grease 2 loaf pans and preheat the oven to 350 degrees F.
-
2In a large bowl, mix eggs, oil, applesauce, mashed squash, vanilla extract, granulated sugar, and brown sugar. Set aside.
-
3In a separate bowl, sift the flour, spices, salt, baking powder, and baking soda.
-
4Slowly add the flour to the wet ingredients. Mix as you add the ingredients on low speed.
-
5Fold in the diced apples, chopped walnuts, and raisins (if using).
-
6Pour batter equally into the two prepared loaf pans.
-
7For the streusel, use a pastry blender to blend the flour, brown sugar, butter, and cinnamon in a small bowl. Once crumbly, mix in the nuts.
-
8Sprinkle streusel over each loaf. Bake for approximately 1 hour or until a toothpick comes out with just a few crumbs.
-
9Cool for about 10 minutes in the pan. Then remove to a wire rack to completely cool.
