Ingredients For banana-coconut quick bread

  • 2 c
    all purpose flour
  • 1-1/4 tsp
    baking powder
  • 1/2 tsp
    cinnamon, ground
  • 1/2 tsp
    salt
  • 3/4 c
    sour cream
  • 3/4 c
    sugar (granulated)
  • 1/2 c
    canola oil
  • 1 tsp
    vanilla extract
  • SET ABOVE ASIDE. MIX THE NEXT 4 INGREDIENTS TOGETHER
  • 3/4 c
    bananas
  • 2
    large eggs
  • 1/2 c
    coconut - shredded
  • 1 c
    walnuts or pecans

How To Make banana-coconut quick bread

  • 1
    combine all ingredients and pour into a sprayed 8.5"x4.5" loaf pan. OR use 3 mini loafs (5-3/4"x3-1/4" each)

    Top with 2 Tbsp coconut

    Bake at 350* for approximately 55 minutes or until golden brown (for mini loaves, bake approx. 40 minutes)
