My grandma used to make quick breads in the summer and fall. We always had an abundance of zucchini from the garden to make zucchini bread.

1 Tbspvanilla

1/2 tspnutmeg

1/4 tspbaking soda

1 cgrated zucchini

2 cflour

1 tspcinnamon

1 tspsalt

1/4 tspbaking powder

1 cchopped nuts (optional)
How To Make zucchini bread

1Beat eggs until light and fluffy. Add sugar, oil, and vanilla. Mix until becomes thick. Add zucchini and stir thoroughly.

2Sift flour, cinnamon, baking powder, baking soda and salt. Mix with other ingredients until smooth.

3Add chopped nuts if desired. Bake in 2 greased and floured loaf pans at 350 degrees for 1 hour.
