Our Mom was from Texas, so we were eating tortillas and enchiladas before anyone else around us even knew what they were. We used to help her make these tortillas for enchiladas.

Ingredients For tortillas (for enchilada recipes)

1/2 cwhite cornmeal

1 tspsalt

1 3/4 cflour

1 chot water

oil for cooking
How To Make tortillas (for enchilada recipes)

1Mix cornmeal and water. Set aside and allow to cool.

2Add the rest of the ingredients. Add a little flour if the dough is too sticky to roll.

3Roll into thin circles.

4Heat a very small amount of oil in a frying pan. Cook on both sides until brown bubbles appear. (The less oil, the better. Can also use PAM.)

5Use for enchilada recipes or any calling for corn tortillas.
