IF you have not prechopped your nuts and Cranberries, I would wait to preheat my oven, till that is finished. less it is cold and the extra heat is a plus. (I can be very slow.) Here in Florida, I put a much loved GE Table Top Oven outside and bake in the summers, but in the cold, I am happy to bake inside, sort of a combo of heating my home, making it smell wonderful and of course baking this quick bread. Also, I am very slow chopper of stuff, so you might be very quick.... so time to prepare is so unknown. And I do all with just a knife.... no fancy machines.

Ingredients For quick banana wheat germ bread

1 1/2 call purpose flour

2 1/4 tspdouble acting baking powder

1/2 tspsalt

1/4 cwheat germ

1/3 cunsalted butter

2/3 csugar

3/4 tspgrated lemon rind (opt) but recommended

2eggs

1 1/4 cripe banana pulp, mashed

1/2 tsplemon juice
-
1/2 cor more broken nuts or any that you have on hand

1/4 cfinely chopped apricots or fresh frozen cranberries or frozen blueberries (yummm) or leave them out?
How To Make quick banana wheat germ bread

1Preheat oven to 350 Have all ingredients at about 75 F Sift before measuring: 1 1/2 C all purpose flour Resift with: 2 1/4 t double acting baking powder 1/2 t salt Add: 1/4 C wheat germ

2Blend till creamy 1/3 C shortening (I use unsalted butter) 2/3 C sugar 3/4 t grated lemon rind

3Beat in: 2 beaten eggs 1 to 1 1/4 C ripe banana pulp 1 t lemon juice

4Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition till smooth. Fold in 1/2 C broken nuts 1/4 C finely chopped Apricots, chopped Cranberries or?

5Place the batter in a greased loaf or bread pan. Bake about 1 hour or till done. Cool before slicing.
