Ingredients For llangofllyn pikelets

2eggs

1/2 pt300ml milk

3 oz75g melted butter

4 oz100g self rising flour

2 oz50 g sultanas or currants
How To Make llangofllyn pikelets

1Beat the eggs, the milk and the melted butter. Add the flour and beat to a smooth batter. Add currants.

2Heat griddle or cast iron fry pan and lightly oil. Drop tablespoonfuls of mixture on the griddle. Lightly brown on one side and then turn over to lightly brown the other.

3Serve warm with butter and a sprinkling of caster sugar(quick dissolving)
