I made this delicious brunch item using leftover stale whole wheat & Italian Bread. I read a post by Susan F. here at Just A Pinch, where she made some but they disappeared before she could take a picture. This is my version. I was out of town & this was a perfect way to use stale bread for today's Brunch. I also made Irish Bangers & Irish Bacon as well as Sausage Patties. It made everyone happy. I used Vanilla Bean Paste to add extra flavor. I served fresh Strawberries also. Everyone made happy plates, so it was enjoyed by the entire family. It is quick. simple & easy, hope you like it.

Ingredients For french toast brunch waffles

  • 10 slice
    stale whole wheat & italian bread or bread of your choice
  • 1 c
    2% milk or whole if desired
  • 8 lg
    eggs, room temperature
  • 1 Tbsp
    vanilla bean paste or extract
  • 1 tsp
    cinnamon
  • 1/4 tsp
    kosher salt
  • 1/3 c
    turbinado or regular sugar
  • non stick butter flavored cooking spray, or use regular
  • fresh fruit as desired, i used strawberries

How To Make french toast brunch waffles

    Please note that I used 2 types of bowls, a flat dish to dip the bread slices into, and a round bowl to whisk all the ingredients together. Had to add the eggs to a round bowl, to blend more evenly.

    Add the eggs to the round bowl, add in the vanilla Bean paste, milk, salt, cinnamon, & sugar, then whisk together till completely blended. PREHEAT GRIDDLE IRON, AND SPRAY both top & bottom WITH NON STICK COOKING SPRAY.

    Pour egg mixture into flat bowl.

    Add bread slices to the dish with the egg mixture, be sure to coat bread on both sides.

    Remove bread with slotted spatula onto hot griddle. Lower lid and press down slightly, and brown till golden brown, about 2-3 minutes. Repeat until all of the slices are cooked.

    Serve with your favorite sides. Top with your favorite syrup and Butter while still hot. Or enjoy plain with butter.
