How To Make crispy tender tasty hushpuppies
-
1Heat oil in deep fryer to 350 degrees. NOTE 1: you can use an electric skillet or a heavy skillet. Just be sure to heat to 350 degrees. NOTE 2: I used oil that I had just fried oysters in.
-
2Combine all dry ingredients; add egg, buttermilk (may need to add add'l buttermilk), onion, and bacon drippings (can use cooking oil in place of bacon drippings), and parsley paste (can use fresh parsley finely chopped if desired). Batter will be thick but shouldn't be crumbly. Just a thick batter! Mix well; drop in deep hot fat by tea spoonful and brown on all sides. NOTE: these hushpuppies puff up so don't drop to much at a time or the centers may not cook completely.
-
3Drain on paper towels. NOTE: Nice to divide into several bowls and set around table within arms reach.
