I had some overly ripe banana's needing used, so these delicious muffins were my end result... Enjoy!

Ingredients For tasty banana nut muffins

  • 1 c
    sugar
  • 1
    egg
  • 1/2 c
    softened, butter- room temp
  • 3
    mashed, banana's
  • 2 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/2 c
    chopped nuts - i used walnuts

How To Make tasty banana nut muffins

    Preheat oven to 350 degree F. Line muffin tin with cupcake liners.

    In a bowl, cream the sugar, egg and butter together, until fluffy. Add all remaining ingredients and mix only until dry ingredients are incorporated.

    I scooped close to 1/4 cup of batter into each liner. I sprinkled each with a little sugar. Place in oven and bake for30 minutes or until pick comes out clean.

    These muffins freeze nicely as well...if they last that long!
