Ingredients For spiced apple cranberry muffins

  • 1 1/2 c
    all purpose flour
  • 1 tsp
    ground cinnamon, cloves, ginger, nutmeg for filling
  • 1/2 c
    brown sugar, lightly packed for filling
  • 2/3 c
    brown sugar
  • 2 lg
    eggs
  • 1/2 c
    butter softened
  • 1 1/2 tsp
    vanilla extract
  • 1 3/4 tsp
    baking powder
  • 1/2 c
    milk
  • 1/4 c
    white wine or apple juice (optional)
  • 4 md
    apples peeled and chopped
  • 8 oz
    cranberries fresh or frozen
  • 1/3 c
    butter to fry apples & cranberries in pan

How To Make spiced apple cranberry muffins

    Preheat oven to 350 degrees Grease and flour 12 muffin cup tin
  • 2
    Mix brown sugar and spices together in a bowl and set aside Peel and chop the apples and and put into the fry pan with the butter, brown sugar and white wine or apple juice. Heat on medium and stir until softened then add the cranberries. Beat white sugar and butter together until smooth and creamy

    Beat in eggs 1 at a time and add vanilla Combine flour and baking powder together in another bowl and stir into creamed butter mixture

    Mix milk into batter until smooth Pour half the batter into muffin cups Add half the apples and half the cinnamon mixture Lightly pat the apple and cinnamon mixture into the batter

    Pour the remaining batter over the apple layer Top with remaining apples and add more brown sugar mixture Bake for 30 - 40 minutes
