The surprise ingredient here is the squash puree. Makes the muffins really moist.

Ingredients For spice cake muffins

  • 5 lg
    eggs
  • 1 1/2 c
    sugar
  • 1/2 c
    sour cream
  • 1 c
    butternut squash puree
  • 1 Tbsp
    vanilla
  • 1 stick
    butter melted
  • 2 1/4 c
    flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    each ground cardamon, ginger, cinnamon, cloves,allspice, and nutmeg

How To Make spice cake muffins

  • 1
    Cook the squash until soft and then puree in food processor. Mix all the wet ingredients together. Mix all the dry ingredients together. Mix dry ingredients into we ingredients. Mix well

    Pour into muffin cups. Bake at 325 degrees for 20 to 30 minutes
