These are very tasty and a hit with the family. I love the texture of these muffins. I have made them with other dried fruit, fresh fruit, and nuts as well. I even made them with trail mix once (just chop it up first and dust it with flour). I thank my grandma for this recipe, God bless her. My mom saved it for me along with many others. I hope you enjoy these.

We loved the combination of lemon and date in these muffins. It's a tasty muffin that would be good for breakfast or afternoon tea. They are lightly sweet with a nice lemon flavor throughout and bits of dried dates in every bite. The lemon glaze adds an extra touch of sweetness. Yum!

Ingredients For healthier lemon date muffins

  • MUFFINS
  • 2 c
    all-purpose flour
  • 1/3 c
    packed dark brown sugar
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 pinch
    salt
  • 3/4 c
    Dairy sour cream
  • 3/4 c
    packaged pre-cut dates
  • 2 Tbsp
    butter, melted
  • 3 Tbsp
    lemon juice
  • 1 Tbsp
    lemon zest
  • 1 lg
    egg
  • GLAZE (OPTIONAL)
  • 1 c
    powdered sugar
  • 1 tsp
    soft margarine
  • lemon juice

How To Make healthier lemon date muffins

  • Prepared cupcake liners in cupcake tins.

    Preheat the oven to 400 degrees F. Place cupcake papers in a muffin pan. Spray the papers with non-stick spray. Set aside.
  • Dry ingredients added to a bowl.

    To make the muffins, combine the flour, brown sugar, baking powder, baking soda, and salt in a medium bowl; mix.
  • Wet ingredients and dates added to a bowl.

    In a separate medium bowl, combine the remaining ingredients. Mix well.
  • Wet ingredients added to dry ingredients.

    Add the sour cream mixture to the flour mixture; batter will be dough-like.
  • Batter divided in the bowl.

    Divide batter in half in the bowl, then 1/2 again (this makes it easier to distribute evenly).
  • Batter scooped into cupcake tins.

    This should fill each paper cup to the top.

    Test for doneness with a wooden toothpick. Cool completely.
