I like firm bananas,if they have any softness or discoloration to them,I don't eat them.In the freezer they go or in breads or muffins.My husband and sons are not really fans of bananas,they will eat the muffins or bread but seldom will eat bananas.This is a quick,easy and tasty way I use bananas.I usually eat half a banana at a time,so I use the other half sliced on top of the muffins.You can use this same recipe to make banana bread,bake in a loaf pan for 25-30 mins.

Ingredients For lea's banana muffins

  • 2 1/4 c all purpose flour
  • 2 t. baking powder
  • 1/4 t. baking soda
  • 1/2 t. salt
  • 1/2 c soft butter
  • 1 c sugar
  • 2 eggs
  • 2 t. vanilla
  • 2 t. milk
  • 1 c mashed banana
  • 1/2 banana,sliced thin

How To Make lea's banana muffins

  • 1
    Preheat oven to 350 degrees.Spray 12 cup muffin tin with vegetable spray.Combine dry ingredients.Mix well.Cream butter&sugar,add eggs,vanilla,milk and mashed banana.Add to dry ingredients,just until combined. Place in muffin cups.Top each muffin with a slice of banana.Bake 350 for 20 minutes.
