Ingredients For just peachy muffins / cassies

1egg
-
1/4 cmilk
-
1/4 csour cream
-
1/4 cvegetable oil
-
1 1/2 call purpose flour
-
1/2 csugar
-
1/2 tspsalt
-
2 tspbaking powder
-
1 tspcinnamon
-
1 cchopped, peaches - fresh or frozen
-
cinnamon& sugar mixture for the tops - optional
How To Make just peachy muffins / cassies

1Preheat oven to 350 degree F. Line a muffin pan with paper muffin cups or spray with non stick cooking spray.

2In a bowl, beat egg; add milk, sour cream and oil.

3Combine flour, sugar, baking powder, cinnamon and salt.

4Stir into the egg mixture just until moistened. Stir in the peaches.

5Fill greased or paper-lined muffin cups three-fourths full. ( sprinkle tops with cinnamon/sugar mixture - optional). I just spray my pan...they pop right out.

6Bake for 20-25 minutes or until a toothpick inserted in a muffin comes out clean. I have also made a peach glaze for the tops out of preserves, that was yummy. Enjoy!
