I love this recipe as muffins because they are quick and easy and make a GREAT breakfast on the go or even a great snack! I feel good about what i'm eating when I make these muffins and I hope you do too!

Ingredients For honey nut banana bread muffins

  • 1/8 c
    chopped nuts of your choice
  • 1/4 c
    plus 1 tbsp honey
  • 3
    bananas
  • 3
    eggs
  • 1/8 c
    skim milk
  • 1/4 tsp
    nutmeg
  • 2 Tbsp
    ground cinnamon
  • 1/8 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1 1/4 tsp
    baking powder
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    vanilla extract
  • 1/4 c
    sugar

How To Make honey nut banana bread muffins

    In a mixer, combine all dry ingredients. You can use the mixer or just toss quickly with a long spoon to assure all the dry ingredients are mixed together.

    Add all the remaining ingredients and beat on slow for 30 seconds to a minute.

    Pour batter into greased muffin tin or loaf pan. Cook at 350 for about 20-25 minutes
