Ingredients For corn muffins with jalapenos, cheese and bacon

  • 16 oz
    cream cheese, softened
  • 4 oz
    can jalapenos, chopped or diced
  • 4 oz
    can green chilies, chopped or diced
  • 2 c
    shredded cheddar
  • 2/3 c
    cooked bacon, crumbled
  • CORN MUFFIN MIXTURE
  • 2 pkg
    jiffy corn bread mix
  • 2
    large eggs
  • 1/2 c
    milk
  • 4 oz
    can creamed corn

How To Make corn muffins with jalapenos, cheese and bacon

    Cook bacon and crumble into small bits
  • 2
    Place cupcake liners into cupcake pan and spray lightly with non stick cooking spray
  • 3
    Mix cornbread mixture ingredients then about add 2 tablespoons into each cupcake line
  • 4
    Mix cream cheese mixture. Place 2 tablespoons of cream cheese mixture on top of cornbread mixture
  • 5
    Top with bacon. Bake at 400 degrees for 15-20 minutes
