coconut chia fruit muffins

My first attempt at something actually healthy. These are delicious! I want to experiment with different kinds of fruit; like, maybe, pineapple. Oooh, a pina colada muffin. And, of course, my raspberries when they blossom. These are very yum, and good for you!

Pictured is the pineapple experiment. The best so far!

Ingredients For coconut chia fruit muffins

  • 1 c
    organic coconut flour
  • 1/2 tsp
    sea salt
  • 1 tsp
    baking soda
  • 1/2 c
    raw honey (i use half this) or 1/2 cup drained pineapple juice
  • 1 c
    coconut milk, unsweetened
  • 6
    eggs
  • 4 Tbsp
    organic coconut oil, melted
  • 4 Tbsp
    pure vanilla extract
  • 4 Tbsp
    organic chia seeds
  • 1 c
    oraganic blueberries or 1 can crushed pineapple (reserving liquid)

How To Make coconut chia fruit muffins

    Preheat oven to 350. Sift coconut flour, salt, and baking soda in a bowl.

    In a separate bowl or blender, whisk honey, coconut milk, eggs, coconut oil and vanilla. Gently stir wet mixture into dry ingredients and mix in chia seeds.

    Fold in the blueberries and pour batter into greased or lined muffin tin, filling 3/4 full. Bake for 25 minutes until muffins begin to turn golden brown and are cooked through. Immediately remove from tins and cool on rack.
