Ingredients For butterscotch muffins

2 cflour

1 csugar
-
1 pkginstant butterscotch pudding mix

1 pkginstant vanilla pudding mix

2 tspbaking powder
-
1 tspsalt
-
1 cmilk
-
4eggs
-
3/4 ccanola oil
-
1 tspvanilla extract
-
streusel topping:
-
2/3 cbrown sugar
-
1/2 cchopped pecans
-
2 tspcinnamon
How To Make butterscotch muffins

1In a bowl: combine the flour, sugar, pudding mixes, baking powder, and salt.

2In a bowl: combine the milk, eggs, oil and vanilla.

3Stir the wet ingredients into the dry; just until moistened.

4Fill greased or paper-lined muffin cups 2/3 full.

5Combine the topping ingredients; and sprinkle over the muffin batter.

6Bake at 350* for 15-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

7Makes about 1 1/2 dozen muffins...Enjoy!
