Ingredients For blueberry lemon muffins

  • 1 1/2 c
    flour
  • 3/4 c
    sugar
  • 1/2 tsp
    salt
  • 2 tsp
    baking powder
  • 1/3 c
    canola oil
  • 1
    egg
  • 1/3 c
    milk
  • 1 c
    blueberries
  • 2 Tbsp
    squeazed fresh lemon juice
  • 1 Tbsp
    lemon zest
  • 2 Tbsp
    cinnamon sugar

How To Make blueberry lemon muffins

    Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.

    Combine 1 1/2 cups of flour, 3/4 cup of sugar, salt and baking powder. Place oil into a l cup measuring cup with the egg, and milk to fill the cup. Mix into flour mixture.

    Mix blueberries in a bowl with lemon juice and toss. Add to batter and then mix in the zest. Fill muffin cups with batter then sprinkle with cinnamon sugar. Bake for 20 to 25 minutes in preheated oven.
