Ingredients For blueberry coffee cake with lemon sauce

  • 1/2 stick
    butter softened
  • 4oz
    cream cheese softened
  • 1 c
    sugar
  • 1
    egg
  • 1 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla
  • 2 c
    fresh or frozen blueberries (if fresh,wash then dry berries on a paper towel)
  • 2 Tbsp
    flour for tossing on blueberries
  • lemon sauce (recipe below) or powdered sugar

How To Make blueberry coffee cake with lemon sauce

    Stir all ingredients (except blueberries) together in a large bowl.

    Sprinkle 2 tablespoons of flour over blueberries and toss gently to cover. (this keeps the blueberries from going to the bottom of the cake.)

    Gently fold blueberries into the cake batter.

    Pour mixture into sprayed(pam) baking dish. Bake 30-35 minutes or until tester(toothpick) comes out clean. Cool then dust with powdered sugar or drizzle with Lemon Sauce. (optional) RECIPE BELOW

    Lemon Sauce: 1/2 cup sugar 4 1/2 tsp cornstarch 1 tsp grated lemon peel 1 cup water 1 tbls butter 2 tbls lemon juice In a sauce pan combine sugar, cornstarch, lemon peel. Gradually add water until blended. cook and stir for 2 minutes Remove from heat and stir in butter and lemon juice. Cool. This can also be kept in the refrigerator and heated in the microwave when needed.
