banana nut & oatmeal muffins-bakintime
Since I like to eat something quick to go with my first cup of coffee, early in the morning, I bake muffins on a regular basis (about every other morning). It's not unusual for me to be up at 6:00 a.m. and baking muffins! This Winter I've become hooked on making muffins often, especially with apples and walnuts or with banana and walnuts. We're fond of nuts in our muffins! I also don't want a lot of sugar and a cake-like muffin, I want a chewy muffin with crunch and lots of flavor.

1&!/2 call purpose flour

1/3 clight brown sugar

1 & 1/2 cold-fashioned rolled oats

1 Tbspbaking powder
-
1egg
-
1mashed banana
-
1 cmilk
-
1 Tbspvegetable oil

1/2 cchopped walnuts
How To Make banana nut & oatmeal muffins-bakintime

1Spray muffin pan with canola oil (PAM); and preheat oven to 425 degrees.

2Place dry ingredients in a medium bowl, stir to blend.

3Combine egg, oil, milk and mashed banana in a small bowl.

4Add wet ingredients to dry ingredients and stir until combined, and then add walnuts.

5Using an ice cream scoop, spoon batter into muffin cups.

6Makes twelve medium muffins. Bake for 20 minutes. Cool five minutes and remove from muffin pan. Serve warm or cool and freeze. May be warmed in microwave in 20-25 seconds for a quick breakfast.
