apple protein muffins - sugar free
We try to eat "clean" at least 80% of the time and we eat very little refined sugars. For those with a sweet tooth, this recipe is probably not going to be sweet enough, but my family & my son's friends love them. I am an Independent Plexus Ambassador so the only protein powder we use is Plexus 96 protein powder. It is sweetened with Stevia which is my family's sweetener of choice. We do not use ANY artificial sweeteners. Only Stevia, PURE honey or coconut sugar and for special occasions, organic Sugar in the Raw.

1 corganic unbleached all purpose flour

1 coats (i use organic)

2 tspbaking powder

1/4 tspsalt

2 tspcinnamon

1/4 tspnutmeg

1 pkgplexus 96 vanilla protein powder (28 grams)

1 lgegg, beaten
-
1/4 cmelted butter or coconut oil
-
1/4 cmilk or almond milk

2 cchopped apples
-
1 cchopped pecans or walnuts (optional)

1/4 cplain greek yogurt
How To Make apple protein muffins - sugar free

1Preheat oven to 350 degrees. Grease muffin cups or use paper liners.

2In a large bowl combine flour, oats, baking powder, salt, cinnamon, nutmeg and protein powder. Make a well in center of flour mixture and set aside.

3In a medium bowl combine remaining ingredients. Add egg mixture to flour mixture. Stir just until all is moistened (batter should be lumpy). Spoon into muffin cups.

4Bake at 350 degrees about 20-25 minutes. Makes 12 muffins.
