These tender, tasty biscuits are my kids favorites...I used to have these made for when they got home from school...they love dipping them in pizza sauce...You could add other veggies if you like...I never make them the same way twice....this is just what I used today! My daughter says they remind her a lot of Cheddar Bay Biscuits...:) Enjoy!

  • 2 c
    flour
  • 1/2 c
    corn meal
  • 1/2 c
    cold butter - cubed
  • 1
    green onion, minced
  • 1/3 - 1/2 c
    diced small, pepperoni
  • 1/2 tsp
    garlic powder
  • 1 tsp
    dried basil
  • 1/2 tsp
    oregano
  • 1/2 tsp
    salt
  • 1 Tbsp
    baking powder
  • 1 c
    shredded, mozzarella cheese
  • 1/4 c
    shredded parmesan - plus a few tsp for garnish
  • 2
    eggs
  • 3/4 - 1 c
    buttermilk
  • dried
    parsley - garnish - optional
  • pizza
    sauce for dipping - optional

    Preheat oven to 375 degree F. I then lined a baking sheet with parchment paper, you could also just spray a sheet with non stick cooking spray. In a large bowl, I mix the flour, cornmeal, baking powder, basil, oregano, garlic powder and salt.

    I then add this to my food processor. Add the butter and pulse till forms crumbs. ( Can cut in the butter with knives or pasty blender as well, just easier with food processor.) I then pour back into bowl.

    Stir in the onion, pepperoni and cheese.

    In a small bowl, whisk the eggs with the milk. Stir this into the dry mixture, until well blended.

    Turn out onto a well floured surface and knead 5 - 6 times.

    Cut in half and with floured fingers, pat each half into a circle about 1 inch thick. You could cut into triangles or I use my biscuit cutter. I also used the scraps and shaped with my fingers.

    Place on prepared baking pan, about 1 inch apart. I then used a pastry brush and brushed each biscuit with buttermilk, then sprinkled with more Parmesan. Bake for 20 - 25 minutes or until golden. If you make them smaller, adjust baking time. Serve immediately. My kids like dipping them in pizza sauce. Enjoy!
