A mini version of our homemade buttermilk biscuits. It was necessary to downsize after all the children moved out!

Ingredients For mimi's small batch buttermilk biscuits

  • 1/4 c
    Crisco
  • 1 c
    self-rising flour
  • 3/4 c
    buttermilk
  • 2 Tbsp
    bacon drippings
  • 4 Tbsp
    cold butter

How To Make mimi's small batch buttermilk biscuits

    Preheat your oven to 425°. Using a fork, cut the Crisco into the self-rising flour.

    Mix in the buttermilk with the crumbled self-rising flour just until it becomes a loose ball. Do not over mix!

    You may need to add a little more flour to get it into a loose ball, the key here is not to handle the dough too much.

    Turn the dough out onto a floured board and scrape any leftover out of the bowl on to the ball.

    Again, do not over mix. Using your hands that have been floured well gently fold over onto itself a couple of times. Roll into a slightly flattened ball.

    Using a dough cutter, gently cut into four even pieces. Take each piece and gently roll the sides into some more flour and put these four pieces into a slightly greased small skillet. The key here is that they are touching. Biscuits rise more when they're bumped up close to each other.

    I grease my skillet with leftover bacon drippings. I also put the bacon drippings on top before it goes into the oven.

    Bake 15 to 20 minutes, or until slightly brown on top. Remove from the oven, gently open each biscuit using a fork, and place a pat of butter in each! Enjoy....
