This is an easy buttermilk biscuit recipe anyone can make. There is not a lot of shortening in these biscuits, so make sure to use full-fat buttermilk to add a little fat. Once baked, the outside gets crunchy, and the inside stays fluffy and tender. Since they're on the savory side, a smear of butter and sweet jam is a lovely contrast.

1/2 tspsalt

2 Tbspbaking powder

1 Tbspshortening

1/8 tspbaking soda

1 c+ 2 Tbsp full-fat buttermilk

1/2 coil

Test Kitchen Tips
We kneaded the dough, with a touch of extra flour, about 4-5 times before cutting.

1Sift flour, salt, and baking powder into a mixing bowl.

2Add shortening and blend well.

3Add baking soda to all the buttermilk.

4Blend buttermilk mixture into flour mixture. DO NOT OVERWORK DOUGH.

5Heavily flour surface and the top of the dough (it's pretty sticky). Roll out 1/4 thick and cut with a 2-inch biscuit cutter OR cut into squares.

6Dip biscuits in oil to cover all sides.

7Place on an oiled baking sheet immediately with all biscuits touching.

8Bake at 500F for 8 -10 minutes or until nicely brown.

9Serve with butter and jam.
