For those mornings when you wake up smelling bacon frying in your mind. These biscuits provide a moist cheese and bacon-flavored carrier for your favorite bacon slices (and whatever else you want to pile on the sandwich). I enjoyed mine last weekend with a dollop of homemade strawberry fig preserves. This is a way to have that great bacon flavor in the bread without chopping bacon and putting it into the dough.

Bacon lovers, these salty and sweet bacon biscuit bites are calling your name. Adding bacon grease to the dough elevates the smoky bacon flavor of the biscuits. Tender and fluffy, the biscuits are the perfect vehicle for bacon and jam. The touch of jam adds some sweetness to balance the salty bacon and biscuit. These would be great for breakfast, brunch, or even an appetizer at a party.

Ingredients For bacon biscuit bites

  • 6 - 8 slice
    bacon
  • 2 Tbsp
    bacon grease
  • 2 c
    all-purpose flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1 tsp
    Kosher salt
  • 3 Tbsp
    lard, chilled
  • 3 Tbsp
    unsalted butter, chilled
  • 1 1/4 c
    shredded cheddar cheese
  • 1 1/4 c
    Monterey Jack cheese
  • 1 c
    buttermilk
  • jam or jelly, for serving

How To Make bacon biscuit bites

  • Fry bacon reserving bacon grease.

    Preheat oven to 450 degrees F. Fry bacon and reserve 2 Tbsp of grease.
  • Combine flour, baking powder, baking soda, and salt.

    Combine the flour, baking powder, baking soda, and salt.
  • Cut in lard and shortening.

    Cut in the cold lard and butter with a pastry blender. It should resemble gravel and the lard and bacon should be cut down to pea-sized pieces.
  • Mix in the cheese.

    Mix the cheese into the dry ingredients.
  • Add the buttermilk and bacon grease.

    Pour in the buttermilk and bacon grease.
  • Stir until the dough comes together.

    Stir just until the dough comes together.
  • Pat out the dough and cut out the biscuits.

    Roll out to 1" thickness and cut out the biscuits with a 2" biscuit cutter.
  • Bake the biscuits.

    Bake for 10 - 12 minutes until golden brown.
  • Split the biscuits. Add butter, jam, and a slice of bacon.

    Split hot biscuits; lightly butter. Place 1/2 slice of crispy bacon between halves. Top bacon with your favorite jam or preserves. Combine halves and enjoy!
