INGREDIENTS
2 cups  cake (not self-rising) or all-purpose flour
1/4 cup  pecans, toasted and finely ground
1 teaspoon  granulated sugar
1/2 teaspoon  salt
1/3 cup  vegetable shortening
1/3 cup  cold unsalted butter, cut up (no substitutes)
5 - 6 tablespoons  ice water
2 - 2 1/2 cups  pecan halves, divided
3 large eggs, beaten
3/4 cup  firmly packed brown sugar
3/4 cup  dark corn syrup
5 tablespoons  butter or margarine, melted
1 tablespoon  bourbon
2 teaspoons  vanilla extract
2 cups  heavy or whipping cream
1 tablespoon  confectioners' sugar
1/4 teaspoon  ground cinnamon
1 1/2 teaspoons  pure maple syrup
