4 small carrots, peeled and diced
4 garlic cloves
3 celery stalks, chopped
FLAVOR SACHET
3 sprigs of thyme
3 sprigs of parsley
2 bay leaves
1 tbsp black peppercorns
6 inches of cheesecloth
Butchers twine or string
60 ml vegetable oil
50 g butter
40g flour(optional)
200 g small button mushrooms
16 peeled pearl onions
1 tbsp tomato purée
750 ml bottle of red wine, preferably burgundy
300 ml veal stock
150g double smoked bacon, cut into 1 cm cubes
60 ml brandy
3 tbsp fresh chopped herbs chive, parsley, basil
