INGREDIENTS
For Hollandaise Sauce:
3 egg yolks
1/4 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
pinch of salt
2 dashes hot sauce
1/2 cup butter, melted
For Eggs Benedict:
8 slices Canadian bacon
4 English muffins, split
2 teaspoons white vinegar
pinch of salt
8 eggs
Salt and pepper, to taste
