"Blackened Shrimp Avocado Burrito Bowls are the perfect way to ring in the New Year with big bold flavor and a healthy meal!  These are packed with blackened shrimp, brown rice, corn, black beans, and avocado.  They are also great for meal prep!  Happy New Year!  We just got back from Disneyworld with our family.…..."

INGREDIENTS
1 pound large shrimp (peeled and deveined)
1 Tablespoon Chili Powder
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon cumin
½ teaspoon garlic powder
1 teaspoon salt
¼ teaspoon pepper
2 Tablespoons olive oil (divided)
1 can corn
1 can black beans
2 cups brown rice (cooked (I used a brown rice quinoa blend))
2 avocados (sliced)
1 avocado
1/4 cup chopped cilantro
1/4 cup greek yogurt
1 garlic clove
3 Tablespoons olive oil (add more for smoother consistency)
1/2 teaspoon salt
1/4 teaspoon pepper
