Catfish:
•
* 2 lemons, thinly sliced
•
* Compound butter

* 4 (8-ounce) fresh skinless, boneless catfish fillets
•
* 1/4 cup Creole seasoning (recommended: Tony Chachere’s)
•
* Whole chives, for garnishing
