INGREDIENTS
2 2/3 cups + 2 tablespoons all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons unsalted butter, at room temperature
2 cups granulated sugar
2/3 cup canola or vegetable oil
1 tablespoon pure vanilla extract (use clear extract for a pure white cake)
1 cup whole milk room, at room temperature
6 large egg whites, at room temperature
8 oz. (1 block) full fat cream cheese, chilled
1 3/4 cups powdered sugar
8 oz. mascarpone cheese, chilled
2 cups heavy cream, chilled
1/2 teaspoon almond extract, or to taste
6 tablespoons simple syrup
