1/4 ccornstarch

1/2 tspsalt

1/4 ccold water

1 1/4 chot water

1/4 clemon juice

1 Tbsplemon rind, grated

3 lgegg yolks, lightly beaten

1cooled baked shell

3 lgegg whites, beaten

How To Make lemon meringue pie

1Combine sugar, cornstarch and salt Blend in cold water Add hot water Cook until thick, stir constantly Reduce heat and cook until clear (5-8 minutes) Add lemon juice and grated lemon rind, cook for 2 minutes Blend mixture slowly into 3 egg yolks, slightly beaten Return to pan, cook 2 minutes stirring constantly Add 2 tsp butter Cool, turn into cooled baked shell

2In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.

3Brown at 325 for 15 minutes.
