3 large eggs, room temperature, beaten
3/4 cup (150g) ground almonds
2 teaspoons almond extract
7 oz (200g) seedless raspberry jam
Flaked almonds, to garnish
1 and 1/2 cups (190g) plain/all-purpose flour
1/4 teaspoon salt
1/2 cup (60g) icing/powdered sugar
1/2 cup (115g) unsalted butter, chilled and diced
1 large egg, beaten
