Baked Pork Chops Recipe

1 teaspoon ground mustard
1/4 teaspoon black pepper
4 boneless pork chops (about 1 1/2 pounds) or bone-in pork chops (about 2 pounds), 3/4- to 1-inch thick (see Tip)
1 tablespoon vegetable oil, plus more if needed
1 tablespoon butter (optional)
