1/2 cup Roasted Red Bell Peppers strips (See Roasted Red Pepper Mashed Potato Recipe or purchase gluten free ones in a jar or can*)
•
Extra virgin olive oil, for coating
•
1 Tablespoon dried or fresh parsley, minced
•
Fine sea salt or salt and pepper, to taste
