Ingredients: bacon, cut into inch slices then cut in half; 1 large shallot, minced; 2 garlic cloves, minced; 1/2 cup light brown sugar; 1/4 cup sherry vinegar; 1/4 cup water; 1/4 cup maple syrup; 1/4 cup bourbon (optional, substitute half maple syrup, half water); 1 tsp yellow mustard; Dash of salt
