Authentic Korean Kimchi Recipe

INGREDIENTS
3 Napa Cabbages
1/2 c 1 C coarse sea salt
1 c Gochugaru or Korean Pepper Flakes (medium coarse )
10 cloves garlic
1 Med yellow onion
2" ginger (peeled)
1-2 c cold filtered water (for kimchi paste)
1/4 c fish sauce (optional or omit if vegan)
1/4 c fermented baby shrimp (optional or omit if vegan (*See notes))
2 carrots (cut in matchsticks)
2 spicy chili peppers (sliced thinly)
1 c chopped scallions
1/2 c cooked white rice
1 c cold filtered water
3 tbsp sugar
2 apples (peeled and cored)
