Aunt Bessie's Frosted Fresh Orange Cookies
"This recipe came from my Great Aunt, Bessie McEndarfer. She lived in a big, old fashioned brick house just down the road from my Mom and Dad in the 1950's. Aunt Bessie had a big family. She was a great cook and all her kids and grandkids that I know remember and crave these cookies. This recipe makes a BIG batch of cookies which I'm sure Aunt Bessie needed to feed everyone. INGREDIENTS

2 c brown sugar

2 eggs
•
1 c softened butter (original recipe called for lard)
•
1 c buttermilk or sour milk
•
1 pinch of salt
•
2 1/2 c all purpose flour
•
1 tsp baking soda
•
1 tsp baking powder
•
1 grated orange rind (use 1/2 in cookies and 1/2 in icing)
•
1 c powdered sugar
•
1 Tbsp orange juice (or enough to make a glaze type icing for cookies)
•
1/2 of orange rind (left from cookies)
•
2-3 drops yellow food coloring, optional
