2 shallots, halved and thinly sliced
½ pound asparagus, tough ends discarded, sliced into 1-inch pieces

1/3 cup egg substitute
½ cup reduced-fat Swiss cheese
1 teaspoon chopped fresh thyme
½ teaspoon chopped fresh oregano
