2 pounds ripe apricots, halved and pitted
1 cup sugar
1 cup apricot nectar or water, divided
2 envelopes unflavored gelatin (4 1/2 teaspoons)
1 cup heavy cream
1 cup nonfat vanilla Greek yogurt
