1 cup freshly grated parmesan cheese
1/2 cup ice water
2 pounds apples (such as granny smith, peeled cored and cut into 1/3 inch wedges)
1/4 cup sugar
1 tablespoon freshly squeezed lemon juice
1 tablespoon all purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1 large egg (beaten)
2 tablespoons freshly grated parmesan cheese
