For the apple part:

6-7 seven small Granny Smith Apples, peeled and cut into chunks

1/4 cup (55g) granulated sugar
•
1/4 teaspoon freshly grated nutmeg
•
1/2 teaspoon ground cinnamon
•
pinch salt
•
1/2 teaspoon lemon zest
•
2 teaspoons freshly squeezed lemon juice

For the crisp:
•
1 cup (150g) unbleached all-purpose flour
•
1/2 cup (70g) almond flour (or 1/2 cup slivered almonds chopped up in a food processor)
•
1/4 cup (55g) brown sugar
•
3/4 cup (165g) granulated sugar
•
1/2 teaspoon coarse salt
•
1 teaspoon ground cinnamon
•
1 1/2 sticks (12 tablespoons, or 170g) cold, unsalted butter, cut in pieces
