INGREDIENTS
2-3 tart apples (like Granny Smith) peeled and cut into small pieces (about 3 cups)
1 tablespoon of butter
3 cups all-purpose flour (12.75 oz.)
3 teaspoons ground cinnamon, divided
1 teaspoon baking soda
1 teaspoon salt
1⅓ cups vegetable oil (I used coconut oil but any kind will do.)
½ cup plus 1 tablespoon white sugar
1 cup light brown sugar
3 large eggs
1 teaspoon pure vanilla extract
8 oz cream cheese, softened
1 stick of unsalted butter, softened
3-4 cups powdered sugar
1 teaspoon vanilla extract
